So, we ended up with 12 and a half batches (9 SR flour, 2 plain flour, 1 dairy free, 1/2 vegan). That was for 14 adults and 8 children (I can’t remember how many came last year).
I was happier with the construction—I didn’t get flour all over the kitchen (paper curved into a funnel), add the egg and milk mixed together, then shake. But most of the batches had some lumps. They were better after extra shaking, so next year when people arrive and ask what they can do, I’ll set them to shaking:-) I’m also thinking we should do some pancake races:-)
Next year, I think I want to do something for Collop Monday. Probably just with the family, but something.

I never did post the recipe, so here it is.
Pancakes
113 grams flour (plain or self raising, depending on whether you want crépes or flapjack style)
1 egg
300 mls milk (or water, or soy milk)
Beat the lot together, then pour out dollops into a frypan (either non-stick, or wipe over with a little butter). When the top bubbles, and the edges begin to look cooked, flip. Cook for another couple of minutes, then serve with the toppings of your choice. Try sugar and lemon juice (although, we used orange juice tonight which was fabulous), maple syrup and butter (or anything!), jam, honey, or something savoury (we had avocado, but other years we’ve had some curries).
