I’m pretty keen on my nachos:-) It has evolved over time—when I first made them I just had a single layer of chips, topping and cheese, and that was all… but now…

For each person, on a side plate, place a layer of corn chips (I used to use the cheese flavoured ones… but I think plain salted are best).
Smear a couple of dessertspoonfuls of nacho topping (I use a bottled one at the moment… but I’m intending to experiment with making my own) over the top.
Cover with grated cheese.
Put another layer of corn chips on top, along with about the same amount of nacho topping, and some more grated cheese.
Microwave for two or three minutes (depending on how high your pile is:-) )
Top with sour cream, sliced spring onions, chopped lettuce and chopped tomato. I have included avocado on occasion, although it’s not a food I usually choose to eat.
Yum!
Hmm… now I’m hungry:-(
