I had dinner cooked for me tonight! And Paddington wasn’t home:-)
Avocado Pasta from here.
500 g fettuccine
1 cup beans, green, sliced
1 bunch asparagus, sliced
2 zucchini, sliced
1 tablespoon oil, olive
½ onion, red, grated
½ cup parsley, fresh, chopped
2 cloves garlic, finely chopped
2 tablespoons lime juice
2 cups avocado, diced
½ cup parmesan, grated
½ cup olives, black
Cook fettuccine. A couple of minutes before it finishes, add the beans, asparagus and zucchini to the pasta.
Mix oil, onion, parsley, garlic, lime juice and avocado.
Toss the avocado mixture and half the parmesan through pasta and vegetable mix. Serve topped with remaining parmesan cheese and black olives.
Puggle has been wanting to cook this dish since the last time we had it—so, he did:-) (I finished grating the onion for him, and dealt with the boiling water… but otherwise, he did it himself:-) ) He really enjoyed using the mezzaluna to chop the parsley and garlic… All up, it took just over two and a half hours—most of that was chopping the beans! (He kept getting distracted, even burst into ‘Shake My Sillies Out‘ from Playschool (Did you know that you can check the website for the themes of the shows, and search for songs and stories—and obviously they include the writing credits!) Then the dolly had to watch—although that may have been Bilby’s lead… so she sat on the toaster [the doll! not Bilby!])
I was really pleased to see how he stuck with this. He’s often become frustrated (or else I have, because it’s been late enough that I just want dinner done, but today he started straight after Quiet Time. He was very pleased with himself, also:-) He describes it as his favourite meal… of course, he dosen’t actually eat asparagus or zucchini as a rule:-)
